Vegetable Soufflé

As promised, a veggie dish instead of cakes and pancakes today. Sometimes I think vegetable dishes are difficult because so many are similar to others I’ve made from this time period. I think that today’s vegetable soufflé is just a bit different than the usual carrot and pea recipes, and it’s quick and easy to make.

I found the recipe in the Assistance League’s Pleasing Food cookbook published in 1941 by the The Assistance League of Long Beach, California. I love this cookbook because the recipes are all written by hand and reflect regional tastes in the recipe selection. The inside title page has a different title than the cover. There it is listed as The Assistance League of Long Beach Present Favorite Recipes and Tea Room Delicacies.”

I also love the ads found scattered throughout the book. I’ve included some of them at the very end of this post.

Vegetable Soufflé

  • 4 eggs
  • 2 full cups milk
  • 3 c cooked vegetables—peas, carrots, and string beans make a good combination
  • 1 bouillon cube
  • Salt and pepper

Heat milk. Add bouillon cube and dissolve. Beat eggs and add the milk. Pour over the vegetables. Cook 45 minutes in a moderate oven or until the custard sets. Serve with creamed chicken, creamed chipped beef, or cheese sauce.

This is a fine side dish that will go with pretty much any main dish you can think up. It’s basically egg casserole with vegetables. Not quite an omelet and not quite scrambled eggs, really. It’s somewhere in-between. Salt and pepper this to taste and you have a hearty addition to your meal.


As far as I can tell, this restaurant is no longer in business. The only thing I cold find suggested that it might have closed in the 1970s, but that’s not from a solid source. Does anyone know about this restaurant?

James W. Hanbery, the insurance agent with the ad in the lower left corner above, was a WWI hero and received the Distinguished Service Cross for his service to his country. He died in 1960.

The other businesses don’t seem to be in business today.

    1. Thank you for the kind words. It means a lot to me. I love the ads. I like seeing what products they would have been buying and how things we still use today have changed with time. The old magazines are like a form of time travel, which I think is great!
