This recipe is from Your Gas Range Cook Book and is an easy side dish that works with many different entrees. The cookbook was published by the Home Service Department of the Wyandotte (Kansas) County Gas Company in 1940.
I really liked the addition of vegetables and egg. The directions say to put the egg, carrots, and peas around the rice, but we added it to the rice mixture instead. This recipe is a versatile way to use leftover vegetables, too. It would be easy to add bell peppers or corn if that is what you have available.
