Do you like cottage cheese? In my house, you either love it or hate it. The line is firmly drawn. Growing up, we ate it plain with salt and pepper, or with an added slice of tomato and/or onion. I knew that there were other ways to use it, but since the majority of my family doesn’t like cottage cheese, I haven’t explored those recipes. When I saw the recipe for Cottage Cheese Dreams in the hot sandwich section of the Culinary Arts Institute’s 1941 cookbook 500 Tasty Sandwiches, I decided that this would be my last recipe of 2020.

Cottage Cheese Dreams
- 1 c cottage cheese
- 1/4 c chopped pecans
- 8 slices bread
- 1 egg
- 2 tbsp water
- 4 tbsp butter
Mix cottage cheese and pecans and spread on 4 slices of bread. Cover with remaining slices. Dip sandwiches into beaten egg diluted with water and fry in hot butter. Serves 4.

Results
It’s fitting that the last recipe of 2020 was a disappointment. These sandwiches were so bland. We added some salt and pepper, and the sandwiches still tasted like mushy fried bread. The pecans added a light crunch that was much needed to keep the sandwich from being too soggy feeling. I think if you add a tomato or maybe some onion there might be more flavor. I wasn’t sure what to expect from these sandwiches, but I did expect to taste the cottage cheese.
