Looking for a soft, fluffy holiday cookie? Try these Honey Cookies from the Culinary Arts Institute’s 1941 The Cookie Book.
Honey Cookies
- 2/3 c shortening
- 1/2 c sugar
- 1 c strained honey
- 1 egg
- 1/2 c sour milk or cream
- 5 c cake flour
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp cloves
- 1/2 tsp salt
Cream shortening with sugar. Add honey and blend. Beat egg and add together with the sour milk or cream. Sift the dry ingredients together and combine with the wet ingredients. Chill. Roll about 1/4 inch thick and bake in moderate oven (350°F). This recipe makes 4 dozen cookies 2.5 inches in diameter.
Note: We rolled the cookies into little balls and then flattened them slightly.

Results
These are soft and light and have a mild honey flavor. We drizzled honey over some of them before we popped them in the oven. The cookies weren’t overly sweet even with the added honey. Everyone in my family loved them. I think this is a great recipe for Christmas party cookies because they would be nearly universally appealing.
