Thanksgiving: Classic Apple Pie

As promised, here is one more recipe for you. What is a holiday meal without an apple pie? This one is from the Culinary Arts Institute’s 1941 cookbook 250 Superb Pies and Pastries.

Apple Pie

  • 6 apples
  • 1 cup sugar
  • 1/4 tsp salt
  • 2 tbsp flour
  • 1 recipe Plain Pastry (we used refrigerated pie dough to save time)
  • 1 tbsp butter

Pare and slice apples. Sift dry ingredients together and mix with apples. Line pie pan with pastry. Fill with apple mixture, dot with butter, and cover with top crust. Bake in a very hot oven, (450°F) 15 minutes. Reduce temperature to moderate (350°F) and bake 45 minutes longer. Makes one 9″ pie.

Results

This is definitely a classic apple pie recipe. It was warm and sweet and pure apple perfection. Of course, adding ice cream makes everything better, no matter how wonderful the dish is to begin with.
