Christmas: Ration Toll House Cookies

I wanted to be sure to include a recipe for those folks that were dealing with rationing and shortages. Baking in the early 1940s must have been a challenge with limited sugar. A huge part of Christmas celebrations has long been cookies and other baked goods. How different Christmas dessert tables must have looked during the war years! Here is a recipe from Nestle in the December 1942 Better Homes and Gardens. There’s a bonus recipe for fudge as well.

Results

I’ll be honest–I didn’t have high hopes for these cookies. Most cookies that don’t have sugar also lack in flavor. I was very pleasantly surprised. These were soft and moist, and the chocolate provided the right amount of sweetness. They actually reminded me of a chocolate chip pancake. If you are looking for a ration cookie recipe, I’d recommend this one. I’d definately bake these again.
